Beetroot Bagels Recipe
I am in love with the Sandeep recipe book that we presented to you a few months ago, I am tempted by all your recipes and I have decided that I will be doing them all little by little. Today it is the turn of this recipe for beet muffins.
The dough of these muffins has a delicious texture, very soft and fluffy, I suppose to use beets. For those who do not like this vegetable, tell them that its flavor is barely noticeable and instead gives the dough a beautiful pink color. You can use any form to decorate the rolls.
Ingredients for 24 units
- 200 g of crushed cooked beets, 650 g of force flour, 25 g of fresh baker’s yeast, 25 g of sugar, 300 ml of water, 1 and 1/2 teaspoon of salt, freshly ground black pepper and 50 g of butter at room temperature.
How to make beet muffins
Mix the flour and yeast in a large bowl, add the sugar, salt, and pepper and integrate everything well. Add the beet, water and mix with the help of a spoon or a baker’s scraper. Add the butter and mix again.
We grease our hands with olive oil, as well as the surface where we go to work the dough. We take out the dough from the bowl and begin to knead. It is a very soft dough and difficult to work without greased hands. After five minutes we will notice how the dough becomes more elastic.
We knead another five or ten minutes until we get a soft and slightly shiny dough. We form a ball and let it rest in a lightly floured bowl, which we cover with a cloth. After a couple of hours, the dough should have grown and doubled in size.
With greased hands, we take the dough out of the bowl and degas it slightly. Cut the dough into 24 portions and make a ball with each one. We place them on a baking sheet lined with baking paper and let them stand for about 30 minutes, while we preheat the oven to 200ºC.
To decorate, we put a heart-shaped template on each bread and with a strainer sprinkle some flour. Remove the template carefully and bake the rolls for about 12-15 minutes. Once cooked, let them cool on a rack.

I served this recipe for beet muffins with raspberry jam. I love the combination of sweet and savory, but you can accompany them with any ingredients because with anyone they will be equally exquisite. You can freeze the rolls that you are not going to consume or prepare half of the dough.
